Work in progress

Well my birthday is coming up and I decided to make my own cake!!! Im loving it...

Since starting Cakes by Jae P, I have loved making new cake flavors and experimenting and for the holidays, I have Blue Velvet Cake on the menu as a special...

Since blue is my favorite color... You know what cake I made!!!

Martini cookies

I have been so busy being mom, business woman and aunt, i have forgotten my greatest fundamentals of fun...

So i have combined my two passions into one thing!

I have a customer who is throwing a Mary Kay party (passion) and she asked me to bake her some cookies (passion) in the shape of martini glasses!!! Dont ask, I didnt, lol.

So, we have lavender sugar sprinkled snickerdoodles!!!

Top tiers on wedding cake, dos and don'ts

Well it has been over a month since my last post. Had a lot going on with my health, but I'm back and ready to rock more cakes out!

So as a cake baker and future celebrity go to for wedding cakes, etc (got to speak it into the atmosphere), I was looking at things people need to know about cakes, especially wedding cakes, when it deals with storage (the tradition of storing the top tier to eat on your anniversary).

My advice: DON'T! The thawed caked if stored improperly will taste awful and the fond memories you had on your wedding day will be replaced with nasty cake.

It has been over four years since I had my wedding and I never cut into the anniversary tier (except at my wedding). We stored it, but improperly and here are the results. For the record, no I did not thaw it to taste it, I took pictures and threw it out.

If you do want to deep freeze your top tier though, the first thing to do is place it in regular freezer for an hour to harden. Then wrap in plastic wrap airtight, then wrap in foil airtight. Place in an undisturbed spot in the deep freezer. When you are ready to eat it, place in refrigerator to thaw properly. Once thawed, let it come to room temperature before you eat it.

My advice (again): ask your bakery if they will make you an anniversary cake (small replica of your wedding cake in design and taste). It will be better than a thawed off-tasting cake.

Well, hopefully my hiatus has not been for too long and my efforts are not in vain...

Business update

Well, like I said I've been busy trying to get business side of Cakes by Jae P up and running. Thanks to my good friend, Jae Dollason, I have a logo and official colors!!! So excited.
It has some shape work and also some icons with it, I'll post more later. I am excited, I am really praying for all good news these next few months...

Developing recipes and sneak peak

Well since my hospital exit, I've been more determined than ever to get my home cake decorating business started. So motivated.

So today, I was back in the lab (my kitchen) developing recipes, vanilla butter cake and devils food cake. The cake turned out well in cake pan, but my cupcake attempts fell short because I dont have a proper scoop, oh well, back to drawing board on that!

The devils food, I just put in cupcake tins to try different scoop techniques. I am impressed at my scoop substitituing skills, but I am still going to by the real deal for when I have cupcake orders.

Sooooo, what am I making??? I gave one sneak peek on my facebook fan page. But for the cupcakes, it is a surprise!!

In preparation of me being busy these next couple of months for the holidays (speaking life into my business), I baked 6 dozen chocolate chip cookies!

My handie assistants were no help, drooling as the kitchen filled up with sweet, chocolate smells!

Nothing like anime cooked meal

Well its been weeks since I've been on my culinary grind outside of school, and though I've been under the weather, the fam deserves a good meal!

I have officially smashed the best dinner award for the kids right now, lol...
Blackened, but baked tilapia, corn on the cob, sweet peas and corn bread muffin!!!

The Art of Cheesecake

Well, I've owed my niece a cheesecake for as long as I can remember. She still loves me.

But its time for me to pay the piper and I decided to write my blog about the wonderful dessert called cheesecake.

Baking cheesecake is as delicate and tempermental as baking a cake. Science at its finest.

Started by creaming 24 oz cream cheese with 3/4 c of sugar. Stop a few times, scrape down the bowl, you want to make sure everything is incorporated well.
Add 3 eggs, one at a time, speed on very slow (dont want to incorporate too much air). Take time to scrape down bowl. You want these eggs incorporated fully.

Usually like to let batter sit overnight to let air bubble escape, but you can tap the pan to release some bubbles. Ideally you want to use a water bath for even cooking, since i dont have a pan large enough, I use a pan filled with water as an assistant.
Cook for 55 min or until set.
Let cool in pan for 20 min or more.

Refrigerate overnight or eat... I love it cold or warm.

Recipe for graham cracker crust:
1 1/2 c graham cracker crumbs
1/3 c butter
3 T sugar

Melt butter and mix all three ingredients, press into pan.

German Chocolate Cake

Sunday was the day, I made this cake, but i actually forgot to post about it.

I made this for a friend of mine, my sis cant eat chocolate so I had to give it away!

Developing recipes

Well, I'm making moves toward opening my cake decorating business/bakery, we decided to start testing recipes. When I say "we," i mean me, lol. But the taste testers are eager as well.

First up on chopping block, is my variation on Lemon Buttermilk Pound Cake.
Creaming the butter and sugar

Zesting the lemon
Adding eggs
Adding flour/buttermilk
Mixing between additions

Scraping down the bowl

Folding in vanilla and lemon zest
Pre-oven
In oven
Fresh out, can you see the steam???
Cooling
Moist and sweet
Taste test

So after the process of making the pound cake...

The taste testers agree with the baker, a keeper!!!
