Spring Collection Launch

Well, to say I am excited about my new job is an understatement! I even have a portrait to commemorate the moment!!!

We had our grand opening on Friday to launch the Spring Collection 2015. It was a busy week of prep and a fun filled night of guests and customers trying the new macaron flavors and new tortes!

My personal favorite macaron is strawberry basil, while everyone else is in love with peanut butter bacon... I don't eat pork though ☺️

I think if you are in the Norfolk, Virginia area, you should come by and try to find your personal favorite!!!!

Well, cake sketching and sleep are on my agenda...

Happy caking,
Jae

New job, new adventure

So it's been a couple of weeks since my last cake...

Here's why... We moved!

Three states north of our beautiful Georgia to the equally beautiful Virginia...

So the first set of business was to get a new job, kids together, get settled, find church home...

I did!!!! New full time job as the Pastry Chef of Hummingbird Macarons and Desserts in Norfolk, Virginia!!!! I'm so excited!!! This is a blessing!!!! A gourmet patisserie! Doing desserts the way I love making them!

We have a grand opening coming on Friday so be on the look out for pictures...

We have some test samples done but they aren't the finished product...

Can't wait to share our adventures here at Hummingbird Desserts...

Stay caking,
Jae!

First cake collaboration

So, I'd never been in a cake collaboration before...

Thought they were cool, so was so excited when I was able to join one...
My first cake collaboration was Happy Chinese New Year!!!

My challenge was to actually pick a design. I knew that I wanted to step out of my comfort zone and do figurine work, but I didn't do what I normally do, which is commit a design to paper, eh, what a mistake that was...

Lesson learned!!!  The cake turned out ok, but I felt it was rushed 😢

But the great thing is, now I know and can move forward to the next one with a better vision of what I have to do!!!

Love life lessons so that was a great one!!!

The cake was chocolate with chocolate IMBC, vanilla fondant lettering and the goat/ram was made from fondant.

I'm happy it didn't look horrible, but next year, I'm going for the wow!!!!

Until next time,

Jae

Happy birthday Alan...

Alan is one of those great guys who is equally annoying as he is great. You can't help but want to surprise him on his birthday...

That's what we did...
The cake is vanilla with vanilla IMBC.
Simple design for a simple kind of guy...
Great surprise for a great guy!

Until next time,

Jae

Mine craft cake

Mine craft...

Mine craft...

I've never seen it, played it, or been interested in it. The only reason I know what the characters look like is because of my son, he's a gamer!

So when my dear friend/sister asks me to remake a cake for her son's birthday, do I take the challenge...

Uh yes!!!

I set out to recreate a cake she sent me, was an all-nighter, but I was pleased with the cake...

Luckily for me I did the Mine Craft world some justice.

I asked my gamer and he said it was perfect!

And the best part, the birthday boy LOVED it!

Talk about exciting!!! I don't like recreating other people's designs but I'm happy I was able to do it!
The cake was vanilla with vanilla IMBC and vanilla fondant. Also used chocolate fondant for decorations.

Until next time,

Jae

Katniss Wedding Dress Doll Cake

So, every year one of my favorite ladies asks for a special birthday cake, this year was no different!

Turning 10 is a big deal, right? So why not ask for something extravagant. My daughter is a HUGE Hunger Games fan, HUGE! So this year, she asked for a Katniss Everdeen Wedding Dress Doll Cake from her favorite book in the series, Catching Fire.

Easy, right? Not for me! I'd overthink and over analyze this baby to the bitter end, but the results were amazing and the birthday girl loved her!
Katniss was inedible because she is the special edition doll made by Mattel. The rest of her was all cake and fondant!
Cake is chocolate with vanilla IMBC and vanilla fondant.

Can you believe she's cake?
Until next time,

Jae

2/28 Wedding Cake

Hello,

After the long sad hiatus, I'm back!!!! I actually haven't stopped working nor have I stopped making cakes, I have been so wrapped up in life that I had to step back from my blog...

That's over!!!! Back to the cake!!!!!

So yesterday was the beautiful wedding for Eric and Samantha. I had the opportunity to meet them through my friend who also was their caterer!

So I made them a four tier, stacked, all butter cream cake!

I've done stacked cakes before but to say I was intimidated by how large this cake was going to be is an understatement! But praise God, it turned out beautiful!!!!

The entire cake is vanilla with vanilla Italian Meringue butter cream, the silver accents are silver diamond cake jewelry bling, and the flowers are real organic white roses with the one pink rose for accent.
This is truly a favorite cake this far!!!!

Until next time cakers,
Jae
