Halloween 2014

Hi cakers,

As normal, in the restaurant industry I get so wrapped up, I forget to let you know what I've been up to.

Well Halloween 2014, was awesome.  I helped the Pastry Chef make all the dessert items for the PO Halloween cruise.  Fun, but draining lol.

Sugar shot glasses, "brain" cupcakes, "severed heads" truffles, three pumpkin cake rolls and 12 dozen shaped cookies...

I was able to step up the creativity, but the task was time consuming!!!!  And the finished product was nice.

To top it off, we received kudos from the members on the cruise!!!!!!

Fun fun!!!!!!!

The pumpkin rolls we hilarious because the first one we did, I rolled the design on the inside ha ha ha (insider...)

Owl Themed Baby Shower Cake for Olivia

Well, this cake was a doozy for me.

Most of the time when I accept a cake I try not to dab too much into the unknown, lol, but this time I wanted to make the owl figurines for the cake because I am creative.

Eh, in my brain I believed I could do it but I was still so nervous.  They turned out okay.  Next time I would do some things different, but I have gained more confidence.

The baby Olivia's mom and family loved the cake and I am so pleased.

The owls are chocolate fondant.  The plaque is gum paste, hand cut, designed and painted.

The cake is almond cake with mascarpone filling and vanilla IMBC.  The chevrons and owl hearts are vanilla fondant.

First Gravity Cake

My first gravity defying cake!!!!!  Wow it was an experience and I earned some confidence in my skills.

The cake is actually two weeks overdue for the person it was initially intended for so it became a combination cake.  Birthday cake/Honoring Passed Loved One's Birthday.  The cake was carrot cake with cream cheese icing, vanilla IMBC and vanilla fondant.

The process was pretty cool, I watched a couple of YouTube videos to get myself prepped.  

I went from a mug design to a plastic red cup design in honor of my deceased friend.  It was a small inside joke we had and I used that as a catalyst for my design.  My dad's favorite beer is Icehouse, so I had him save a can to use with the cake.

After a couple hours working on it, I was finished and boy was I smiling.  My sister approved, my baby cousin approved, my dad was like wow!!!!

Winner, winner.  I can't wait to make another one... Any Takers????

Batman, duh na na na na na na na, BATMAN!!!!

Well to date, this has been one of the most fun cakes to make...


I mean, who doesn't like Batman... No offense to the Superman fans out there, lol.

I got inspiration for this cake from a black & white Batman cake I saw on Pinterest. Noted differences, this cake has splashes of color, lol and it isnt covered in fondant like the inspiration piece.

The birthday girl loved the design! Especially since it was a combination of Batman and art! I cannot explain how excited I was to make this cake.


The figurines were gumpaste. Hand painted and drawn.




This was so fun for me even though I had several no sleep moments, worried that the gum paste wouldn't dry. Lol, I'm always a bundle of nerves on cakes.


But all the decorations all turned out great... I was so pleased and hoped the birthday girl would to.


The cake was vanilla rum cake, filled with pineapple curd and covered with vanilla Italian Meringue Butter cream. This cake combination is because the birthday girl's favorite cake is pineapple upside down cake. So it was recreated in the combo.


I'm glad for this experience because it showed me that my skills are growing. That's always fun to learn, ^_^


And besides, like i said, who doesn't like Batman, lol...

Pineapple Curd Recipe

Hello loves,

Wow am I uber excited about this recipe!!! I make lemon curd all the time, thats just a staple in the culinary kitchen if you need a pie... So with this cake I had coming up, I thought instead of the traditional pineapple upside down cake, why not fill the cake with pineapple curd and be different?!!!

The results are super yummy and intense pineapple that will pair well with the rum cake.

Pineapple Curd
*this can be doubled and halved every easily with similar results*

7 oz sugar
3 1/2 oz pineapple juice
3 1/2 oz egg yolks
3 oz butter

Combine sugar, juice and yolks over a double boiler until thickened (test the back of a spoon by dipping and scraping spoon, if the liquid stays separate on the spoon it is thick enough).

Strain curd and stir in butter.

Cool over and ice bath to reduce the temperature.

Can be used immediately after cooling, or can be covered and stored in the refrigerator for up to 5 days.

Birthday Cake for Wendy

Latest cake was for a beautiful repeat customer, ^_^

Her friend turned 60 years young and she surprised me by ordering one of my summer flavors right before i change the menu! Awesome right!


They loved it!!! And I am so happy that they did!

Cake was peach spice, peach caramel filling and vanilla IMBC.

I will keep you posted as more comes in, cake menu changing over to fall flavors... Cannot wait to transition and have some adventurous clients!!!

Frozen Cake

So this was my first 2D cake, Ive done with a human-like face.

I'm such a perfectionist so I definitely freaked out a little lol.


Olaf was easy, as expected, he is not 2D, he is 3-dimensional, just lying down, but if i was interested in putting him together instead of swimming, i could have.

My daughter loves Frozen and the inspiration came from Olaf's song, "In Summer" though Elsa is her favorite character, he was a must have as well on the cake.

In retrospect, i would have done the face differently, a little less puffy right side cheek, a little more puffy left side cheek, but the experience was well worth it.


The birthday girl loved her cake, recognized the characters instantly and told me I was the greatest!!!! Now thats a great compliment!

Cake is almond cake with cream cheese filling, vanilla IMBC. Olaf is fondant, Elsa is fondant.

Catching Fire Cake

In January, the first cake of the year for me was a birthday cake for a special 9-year old who loves Katniss!

Cake was based on the movie Catching Fire.
Cake: chocolate, vanilla IMBC, sugar pearls, gum paste decal decoration

She was surprised and loved it!

Been away a while

It has been so long since i have posted anything. I apologize for that, but i have been very busy.

I have not neglected anyone though. I have been working on my first youtube video, which i will finish and post soon.

I have been busy in the restaurant helping Chef with some awesome desserts!!!

Valentine's Day is approaching... Have a great one will be posting about it soon!
